Amberjack tartare in pink grapefruit and mint sauce

Ingredients for 4 people:

– 600 g fillet of amberjack cleaned and cut into small cubes
– 1 pink grapefruit
– 1 twig of mint
– Olive oil from Liguria to taste
– Viking pink salt to taste
– White pepper to taste

Recommended wine: DAMA CATALINA (Moscato dry)
